I hope everyone had a wonderful weekend! Can you believe it is the very last day of August?? Tomorrow marks a new month, and (for me) a new season. I don’t know about you, but it just doesn’t seem right for me to decorate for Fall until September. ESPECIALLY in South Texas where it is still very hot. I’m ready for sweater weather, hot chocolate, and pumpkin everything.
We stuck to our meal plan last week, except for Friday–we ended up eating leftovers, which worked out great because we had quite a bit! I don’t know when I started way over cooking for just the two of us, but it seemed every meal I made there were tons of leftovers. Enough for lunch the next day, with even more left still.
This week’s meal plan for us includes 3 freezer meals I made a few weeks ago. I shared some of those recipes with you last week, in case you missed it.
Monday–Beef Fajitas, chips and salsa
Tuesday– Crock Pot Southwest Chicken over rice
Wednesday– Baked pork chops with mashed potatoes and green beans
Thursday–Chicken broccoli and rice casserole
Saturday–Smoked BBQ pork roast, baked potato, salad
Sunday– Dinner Out
