I hope everyone had a wonderful Valentine’s Day weekend! I was so looking forward to having the weekend off, but instead I woke up with the flu on Saturday and it stuck around until Sunday afternoon. So much for getting things done! Instead I lounged around in bed for most of the day on Saturday, and part of Sunday.
Needless to say, we didn’t stick to our meal plan for the weekend, but that didn’t stop me from putting together one for this week.

Tuesday– Grilled Chicken Salad
Wednesday– Tacos with homemade guacamole
Thursday– Noodles and Veggies in Peanut Sauce
Saturday–Grilled Chicken, quinoa, steamed vegetables
