Happy Monday friends! I hope everyone’s weekend was relaxing. I had grand plans for my weekend, but work and a migraine kept me from those plans. Oh well, today is a new day right?
This week’s meal plan is a simple one. I am so excited for summer fruits and veggies to start being in season, plus we are going to be putting good use to our grill.
Some of the perks of living in South Texas I guess. Sorry for all you mid-westerners that just got slammed with a Spring blizzard! I’ll just sit here quietly in my shorts and t-shirt with the windows open, staring out at the green grass and flowers in bloom 😉

Monday–Chicken Fajitas and homemade quacamole
Wednesday– Lemon Chicken and broccoli
Thursday– Chicken salad (with leftover chicken from Wednesday)
Saturday–One Pot Beans, Chicken and Rice
Sunday–Hamburgers, oven fries, cottage cheese
