Did you know that tomorrow is National S’more Day? Yes, there is an entire day devoted only to a campfire dessert! I learned this last year, but sadly just a little too late to share a fun new recipe. Since then, I’ve been throwing around ideas in my head trying to come up with a dessert that pays homage to the traditional treat that I enjoyed many times over a campfire as a kid. Finally, I have the perfect recipe to recreate that campfire experience without even leaving the house–S’mores Poke Cake!
Thinking about s’more brings me right back to my childhood. More often than not our family’s summer vacations meant camping with my aunts, uncles and cousins and we always had the ingredients to make s’mores. Always.
One story in particular always comes to mind when I think about those times growing up. It was our second day at the campground, still early yet, and my mom noticed that the container we stored some of our food had been broken into by a few nocturnal creatures. Those critters played the cruelest trick ever on us by stealing our marshmallows.
Never mind the box of crackers they broke into and the entire loaf of bread they took. After all, having toast with our eggs and bacon or being able to make sandwiches for lunch was the least of our concerns–now there was no way we were making s’mores. Not only did they steal the bag of marshmallows, but those raccoons took their torture to the next level by leaving the empty marshmallow bag hanging from the tree directly above our tents.
We barely survived to tell the story about how we were forced to camp without being able to make even one s’more, and to this day I will never leave any kind of food storage container out where those nasty little animals can get to it.
- 1 box Devil's Food cake mix, plus ingredients needed to make
- 1 container Marshmallow cream
- 1 cup graham crackers, broken up into small pieces
- 1 cup mini marshmallows
- ½ cup mini chocolate chips
- Bake cake according to directions on the box, let cool
- Once cake is cooled, poke holes all over the cake using the handle of a serving spoon or large skewer.
- Spoon marshmallow cream into a medium sized mircowave safe bowl and heat for 10 seconds at a time, stirring well after each heating cycle, until the cream is runny. This will make it spread and run down into each hole.
- Spread marshmallow cream over the top of the cake.
- Sprinkle graham crackers over top of the marshmallow cream.
- Top with mini marshmallows and mini chocolate chips.
